The milk that is destined to the elaboration of “Queixo tetilla” cheese will reunite the following conditions:

I. It will not contain colostrum, nor preservative, nor medicinal products.
II. Its composition will have the following minimums:
  - Protein 3,1%
  - Fat 3,5%
  - Dry Extract 8,4%

III. It will fulfill the hygienic conditions that the effective legislation establishes.
IV. The milk used shouldn´t surpass, when beginning the elaboration process, 18º Dornic, being able to add to it calcium chloride solely (CaCl2).
The Regulatory Council will watch and control the operations of milking conservation, collection and transport of milk, being able to dictate norms so that these operations take place without decreasing the quality and in the best hygienic conditions. (more...)
