The Regulatory Council is an organism integrated in the Consellería de Agricultura, Ganadería e Montes of the Xunta of Galicia as an separate organ with decisive functions in whatever attributions is commandeered to it in the Regulation.

The mission of the Regulatory Council is to apply the rules of this regulation and to ensure its fulfilment. The Regulation of the Regulatory council was approved by Order of the Agriculture, Cattle Farming and Mountain Council on 18 of June of 1993 and was ratified by Ministerial order on 24 of November of 1993 (BOE 25/12/93).

It is recognized as a Protected Denomination of Origin (P.D.O.) in Regulation (EC) 1,107/96 with the Commission on 17 of June of 1996.
