•Scent: smooth, slightly acidic and
remises the milk from which it comes.
•Flavour: milky, buttery, slightly
acidic and salty smooth.
•Crust: fine and elastic, of less than
three millimetres in thickness; natural straw yellow colour
and without mould.
•Paste: soft, creamy and uniform, with
few regularly distributed holes and; a target-ivory yellowish
colour.
